Warm Maine Lobster and Goat Cheese Pate Soufflé with Herbs
(Serves 6)

16 ounces cream cheese
8 ounces goat cheese
2 each egg
2 tablespoons fresh dill and parsley, minced
8 ounces Maine lobster meat, finely shredded

Preheat oven to 375º.

Blend cream cheese and goat cheese to a smooth consistency. Slowly incorporate eggs, one at a time. Add chopped herbs.

Fold in Maine lobster meat and pour into greased ramekins. Bake at 375ºF for 20 minutes. Do not open oven while baking.

Serve immediately with crackers or crusty French bread.
